Strawberry Goat Cheese Bruschetta - Wine Flight Pt. 1

"This Will Leave You Speechless Bruschetta"
No jokes! Strawbs, goat cheese, basil, and balsamic? It's genius, really.
And aren't they such little beauts?
They were so pretty for Christmas, but would be even better in the summertime, when strawberries are in peak season here.
I understand if you can't wait.
I couldn't either. 





Strawberry Goat Cheese Bruschetta
(adapted slightly from Shutterbean recipe)

1 pint strawberries, hulled & quartered
1-2 tsp sugar 
1 log goat cheese (about 8 oz.)
2 tablespoons aged balsamic vinegar
5-6 basil leaves, shredded
1 loaf crusty french bread
olive oil for brushing
kosher salt for sprinkling

Preheat oven to 350°F.
Put cut strawberries in a bowl with balsamic vinegar and sugar and let sit for 10 minutes. 
Put bread slices in a large shallow baking pan and brush slices with oil on both sides, then bake until pale golden, about 10-15 minutes.
 Spread 1 tablespoon of goat cheese on each crostini, top with a few basil shreds and then place a spoonful of strawberries on top. Sprinkle salt on top of the crostini & serve.
